BANANA SPICE BREAD

Ingredients:

1/3 cup vegetable shortening
1/2 cup sugar
2 eggs
1 tsp Watkins Vanilla Extract
3/4 tsp Watkins Banana Extract
1 3/4 cups all-purpose flour
1 tsp Watkins Baking Powder (ALUMINUM FREE)
1 1/2 tsp Watkins Cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp Watkins Nutmeg
1 cup mashed ripe banana
1/2 cup chopped walnuts

Preparation:
Grease bottom only of a 9 x 5-inch loaf pan; set aside. In large bowl, cream together the shortening and sugar until light and fluffy. Mix in the eggs, Vanilla Extract, and Banana Flavor until well combined. In another bowl combine flour, Baking Powder, Cinnamon, baking soda, salt, and Nutmeg. Add alternately with bananas to sugar mixture; mix well. Stir in nuts. Pour into prepared pan. Bake at 350°F for 45 to 50 minutes or until bread tests done. Cool in pan on rack 5 minutes. Turn out of pan and cool completely on rack. To store, wrap tightly and refrigerate.

Makes 1 loaf, 12 servings.
